Mastering freeze-drying fruit with consistency

THE PROCESS
From fresh fruit to powder, in five steps
Each fruit reacts differently. The preparation and parameters are therefore adapted to the product in order to obtain effective drying, a stable texture and a result faithful to the desired use.
STEP 1
Fruit preparation
Receiving, inspecting, cleaning, cutting or preparing according to the nature of the fruit and the desired end result.
STEP 2
Freezing
The fruit is frozen to immobilize the water before the vacuum sublimation stage.
STEP 3
Vacuum sublimation
Under vacuum, frozen water passes directly from a solid to a gaseous state, with a controlled supply of heat.
STEP 4
Final drying and stabilization
The cycle continues in order to reduce residual moisture and stabilize the product before it exits the equipment.
STEP 5
Grinding and packaging
Depending on the application, the product is kept whole or transformed into powder, then quickly packaged in suitable packaging.

What freeze-drying actually changes
By removing the water while retaining the fruit solids, freeze-drying allows for the addition of a fruity signature without introducing the same amount of moisture as a puree or fresh fruit.
