Mastering freeze-drying fruit with consistency

THE PROCESS

STEP 1

Fruit preparation

Receiving, inspecting, cleaning, cutting or preparing according to the nature of the fruit and the desired end result.

STEP 2

Freezing

The fruit is frozen to immobilize the water before the vacuum sublimation stage.

STEP 3

Vacuum sublimation

Under vacuum, frozen water passes directly from a solid to a gaseous state, with a controlled supply of heat.

STEP 4

Final drying and stabilization

The cycle continues in order to reduce residual moisture and stabilize the product before it exits the equipment.

STEP 5

Grinding and packaging

Depending on the application, the product is kept whole or transformed into powder, then quickly packaged in suitable packaging.
